Is there a school of gourmet cooking for chinese food?

The cordon bleu school in France is a famous school that teaches how to make gourmet French food. Is there a similar school in China (or elsewhere) for Chinese food?


There are actually TONS of cooking schools in China, but to know how to cook real Chinese food, you must learn from the people. I spent 6 months in China after culinary school in America wandering around from town to town and asking people how they cooked things and you'd be amazed how much you can learn. The best cooking isn't learned from a school, it's learned from the people.

Keep in mind that there are many different regional cuisines and types of cooking in China.

How can I wean my puppy off the expensive gourmet food?

I really messed up today. I got tired of feeling guilty while watching my toy poodle puppy forage around for dropped crumbs of people food, so I wanted to get him something that he would enjoy eating. I got him this beneful stew dog food which he loved, but it's like $1.50 for one serving. I mixed it in with his regular dry food this morning and then again this afternoon. This morning, he ate it along with his dry food, but this afternoon he ate around the dry food and only ate the stew. He won't even eat the treats that I bought him anymore. This after just two feedings!!! How do I get him to eat both or only the cheaper purina pro-plan puppy food?? Have I messed him up completely?


Dry food and nothing else. I go though this weekly with my dog. I send him to my Mother in laws while we are at work. She cooks for him. Then when I am off taking care of him he refuse to eat. I have learned, when he pulls this. Giving him nothing until he eats.

I prefer to mix the wet with the dry food too. But in this case just dry food. Poodles are smart so this may happen again.

Also the Beneful is alot cheaper at walmart. If that is what he likes then you keep giving it to him mixed much better with the dry food. I use ROYAL CAINE dry food. They have a selection special for poodles.

I know how you feel.. my moms dobie is picky like that but she finally found that it liked one kinda of alpo and thats it.. Pedigree also has country stew, which in my opinion actually smells pretty good :) weirdo i am.... maybe if you only give a different kind of food once in awhile, your dog might give in and eat it. And if you put the dry food out, and he doesnt like it, eventually he will eat it.

WHAT is wrong with feeding your dog decent food? My dogs have dry food out every day. They have two meals a day. They get expensive wet food in the a.m. and at dinner they get table food. I couldn't feed my dogs dry food and nothing else. They are not over weight and they are very healthy. I would not force my dogs to eat dry dog food and only dry food. I think that is cruel.

They also get treats and bones on a daily basis too.

That is very hard to do almost next to impossible , Once they get that taste they want it. I hope you can do it.You could try mixing it but sometimes they can even sniff the gourmet out. They are funny that way.

crush up the purina and maybe water it down so it's more like the expensive food. And this maybe sounds mean but take the expensive away 100%- he won't starve once his belly gets hungry enough he'll give in.

Why have a Dog if you can't afford to give it the best food posible.

These animals are like our children. My Winston, is on exspensive holistic dog food, which is suppose to be healthier for our animals. Treat these animals like you would want to be treated, so I say if you have to sacrfice a little here or there to make sure your baby is well taken care of, it will be worth it in the end.

you haven't completely messed up but its going to seem cruel but only give him the cheap food and he will get so hungry that he will have no choice but to eat it. but don't let it go for more than a say or you can even do like i do with my toy poodle i either soak her food with water until its soft or i will and some gravy to it. its cheaper and they still love it

i had the same problem what i did was i started giving her less of the wet food so she will be hungry and ate the dry one also there are other wet foods that are not that expensive and are chunky and not ground she loves it. buy the 12 packs is a lot cheaper that way and give only him couple a week so he appreciate it and you save also try different types of dry food you'll find one he loves and the treats is OK mine hates them.

Any recipes for gourmet food?

I could some recipes for some really good gourmet food!! Help Please!!!!

Not knowing what you like to cook and what level of knowledge you already have its hard to sort out.

My own favorite recipe is not actually what most folks would call gourmet fair but is so fine! It is Simply to brown off any beef or pork roast (I use two or more tenderloins) and then cook it in a blend of Non-diet Coke, pineapple or white grape juice and a good hickory BBQ sauce. I use an electric skillet with tight fitting lid (vent closed) and I still have to add more fruit juice usually before it is done. This cooks faster than you might expect since the sauce tenderizes the meat as it cooks so watch over it. After you remove the meat carmelize the sauce by cooking it a while longer and serve it beside the meat or over it.

My other favoite is also plain country food. I cut up Kilbasa into thumb length hunks and brown it and add sweet potatos, green peppers and pineapple or apple slices and cook until the vegetables are just done, To this I add a sprinkling of brown sugar and some english walnuts and toss gently. My hubby likes me to add whole steamed onions and baby carrots and I do but to me it is just fine without these last two.

My favorite soup is potato and I cook the diced celery and onions in rich chicken broth then add fresh baked and peeled potatos while they are still hot so the chicken broth is sucked right into their meat and the last thing I add is rich cream to the consistancy I perfer for that particular meal. I make it thick if it is the main dish and thinner if it is served with other dishes to follow. I never need to serve crackers or bread with this as it is so filling on its own.

The third trick I like is to make pasta sauces using only 2/3 of the tomatos called for and substuting 1/3 cooked mushed carrots. It livens up the dish with a fresher taste than just tomatos alone.

eggs parmasian--

6 eggs

1/2cup of grated parmesian cheese.

1 stick of butter or margarine

1/4 cup of crumbled bacon pieces

parsley for garnish

salt and pepper to taste.

melt one stick of butter in a deep frying pan at low heat.

put six eggs into a measuring cup and add these to the hot melted butter.

Turn on low and let simmer for 3 minutes

sprinkle cheese over the top and add the bacon pieces.

simmer til eggs turn white on top and then sprinkle the parsley on.

seperate the eggs from each othe as they simmer to keep them from sticking to the pan.

serve over melba toast or toast of your choice.

serves 6

Chicken curry and rice.

Ingredients: 1 red pepper, 1 green pepper, 1 large onion. 2 pieces of garlic. 1 can of tomato pure 2 potatoes. 1 carrot, 1 apple 2 slices of pineapple, Breast of chicken, rice, salt, pepper - 1 cup of cooking cream, 1/2 cup of olive oil, curry powder and curry sauce(if you have it)

1. keeping aside the chicken breast cut in cubes, the pineapple the cooking cream, and the curry, chop or grate the rest into small pieces and place in a pot with a small glass of olive oil and stir fry slowly moving it with a wooden spoon. Add some pieces of chicken breast chopped very finely and leave all the ingredients to cook slowly. After a few minutes, when it starts to cook, add a glass of water but not much. After about half an hour of simmering all the ingredients should look saucy so then you add pineapple and curry sauce and curry powder and simmer for another 10 minutes adding a 1/2 glass of fresh cream in the last minute. If it looks too chunky you can liquidise it after.

2. Stir fry the chicken breast in a drop of oil on a seperate pan and add a pinch of curry powder. When the chicken is done, thow it into the pot with the other ingredients. ( test it for salting)

3, Serve with boiled white rice and Bon Appetite!!

CALAMARI AND SCUNGILI SALAD

1 lb. fresh squid

1 can conch

2 lemons

1 lime

2 tbsp. mint

1 tbsp. parsley

1 clove garlic, diced

1 olive oil

2 tbsp. fresh Parmesan cheese

Clean and cook squid for a brief time in boiling water. No more than 3 minutes! Allow squid to cool. Cut into ringlets. Don't forget to keep the tentacles, they're the best. Place in a bowl with conch. Squeeze lemon and lime over seafood. Add remaining ingredients, stir and enjoy.

PASTA CARBONARA

1/4 c. heavy or whipping cream

4 eggs

1/2 lb. bacon, diced

1 green pepper, seeded & diced

1 lb. fettucini or linguini

1 tsp. olive oil

1/4 cup chopped fresh parsley

Salt

1/4 c. butter

Parmesan-Romano cheese, grated

Grated pepper

Sprinkle of salt

Set cream and eggs out of refrigerator to room temperature.

In a skillet, fry diced bacon until crisp. Remove bacon and drain on paper toweling. Reserve 2 tablespoons of bacon fat in skillet. Saute diced green pepper in reserved bacon fat in skillet.

In a large pot of water add:

1 tbsp. salt

1 tsp. olive oil

Bring water to a boil and cook fettucini or linquini according to package directions.

Mix together heavy cream with eggs and melted butter. Add 2 tablespoons finely chopped parsley (save remainder for sprinkling with cheese).

Add heavy or whipping cream (unwhipped) to pan and heat over low heat very briefly. Turn pasta into a heated serving casserole and stir with butter until butter has melted. Stir in egg/cream mixture, and serve with a sprinkling of cheese and chopped fresh parsley.

All food has the potential to be gourmet food . Gourmet cooking is simply about using great ingredients and cooking them perfectly every time . If you can't cook to those standards all the" gourmet" recipes in the world will not result in a gourmet product.

So if tomorrow morning you decided to have French Toast , a fresh fruit compote and coffee for breakfast and wanted to have a gourmet meal you would:

Buy your coffee beans whole and grind them to order

Use real light cream

Select ripe and in season flavorful fruit .All your pieces of a certain type of fruit would be cut the exact same size. The compote would look great.

You would buy freshly baked Challah bread and slice it into 1' slabs

You would not use artificial vanilla nor would you use artificial maple syrup

The French toast would be cooked to perfection and would be served on a warm plate

That is a gourmet meal

A big antipasto platter....

Olives

Different cheeses (Brie , Camembert, blue, smoked...)

Smoked salmon and other sliced cold meat

Char grilled eggplant and capsicum

semi sun dried tomatoes

A couple of really nice deli dips

Artichoke hearts

Lots of Yummy bread

I'm not sure what you consider gourmet, but I think Standing Prime Rib of Beef with Yorkshire Pudding and steamed asparagus is delicious, elegant and "gourmet" yet easy to make. Gourmet magazine has a website if you're looking for recipes with lots of steps, etc.

Where to find a good online site for Cestas de Gastronomia (Gourmet Food Baskets)?

Ive been looking for ages but can not find anything suitable.

Im wondering if anyone knows of any good sites that do Gourmet food baskets for delivery.

Only Spanish baskets (Cestas de Gastronomia) as it is for my Spanish clients. You know the type, with Cava, wine, jamon, aciete, etc etc (expensive and very nice)

Also preferably I would like to have a choice of various food and drink items and choose what goes in the basket myself if possible.

Here is a question about "food discrimination." What exactly is "gourmet" food? I will list a number of

foods, and you tell me how many of them you would consider to be "goumet" foods. My guess is that you will pick very few of them, unless you are from the South. I think that "gourmet" food is food enjoyed by the rich and famous in the Northeastern part of the U. S. How many of the following would you consider to be "gourmet? 1. Chicken Fried Steak with cream gravy 2. girts 3. Purple Hull peas 4. Blackeyed peas. 5. cornbread 6. turnip greens 7. fried okra. 8. Deep fried fresh water catfish. My guess is that you think very few of these would be "gourmet" food. Am I right? If so, it just proves that Southern culture and Southern foods are considered inferior by many of you. Tell me what you think.


Gourmet food is used as an adjective for meals of especially high quality, whose makers or preparers have used special effort or art in presentation or cooking the meal, or for facilities equipped for preparing such meals, such as a restaurant. The term and the practice may have negative connotations of elitism or snobbery, but is often used positively to describe people of refined taste and passion.

AS for those foods you've listed:

1 - I would call it comfort food rather than gourmet

They would be ethnic or regional foods. Not necessarily gourmet. I hae only tried cornbread out of those, and probably not a great one at that. Would be tottally up to trying ANY of these - they all sound great!

Don't be so down on your foods...

Actually, in the past few years, the trend is to upscale comfort food. Many expensive restaurants are reinventing burgers, grits, mac and cheese-during a business lunch couple weeks ago, I came across a "homemade mac and cheese" in NYC that was $60 a portion. They also had blackened catfish with fried green tomatoes, so there you go.

I don't like Southern food because I find it too heavy, and I hardly ever eat fried food, but that's just my personal preference.

Does all gourmet food involve ingredients I dislike intensely?

I despise asparagus, spinach, raspberries, exotic cheeses, mushrooms, dark chocolate, and meat that's not well-done. I have tried each of these things, prepared numerous ways, and I still don't like them. I nearly gag when I see people on TV eating these things and going "YUM!"

Does all gourmet food involve stuff like this?


No, absolutely not. Gourmet means any food prepared to the highest of standards. Some xamples are Milk Chocolate Souflet with strawberries, spice crusted ham, ginger tart, coffee toffee pie, lemon zested lobester & clams, and the list goes on. Here are the recipes to some delicous gourmet foods you might like:

--Roasted Chicken with Garlic Confit

12 garlic cloves (about 1 head), lightly smashed and peeled

3 fresh thyme sprigs

3/4 cup plus 1 tablespoon olive oil

1 (3-pound) chicken, quartered

1 tablespoon unsalted butter, softened

Put oven rack in upper third of oven and preheat oven to 500 degrees F.

Cook garlic, thyme, and 3/4 cup oil in a 1 to 1 1/2-quart heavy saucepan over low heat, uncovered, until garlic is very tender but not golden, about 25 minutes.

While garlic is cooking, pat chicken pieces dry and rub all over with butter and remaining tablespoon oil. Sprinkle all over with salt and pepper. Arrange chicken, skin sides up, in a shallow baking pan and roast 20 minutes.

Transfer garlic to a small bowl along with 1 tablespoon garlic oil and mash with a fork. Spread mashed garlic over skin of roasted chicken, then return chicken to oven and roast until just cooked through and skin is crisp, about 5 minutes.

Maple Almond Brittle

1 1/2 cups Grade B maple syrup

1/4 cup light corn syrup

1/2 teaspoon salt

1 1/2 cups sugar

2 cups sliced unblanched almonds, toasted lightly

In a heavy saucepan combine the maple syrup, the corn syrup, the salt, and the sugar. Bring the mixture to a boil over moderate heat, stirring and washing down any sugar crystals clinging to the side with a brush dipped in cold water, and boil the mixture, undisturbed, until it registers 300 degrees F on a candy thermometer. Stir in the almonds quickly and pour the mixture onto an oiled marble slab or a baking sheet lined with foil. Spread the mixture as thin as possible with a metal spatula and let it cool. Break the almond brittle into serving pieces.

I love gourmet food, but, like you, I am not fond of asparagus, raspberries, any kind of chocolate, and several other things.

Your taste is your taste! When you go to a 5 star restaurant, try something on the menu that you have never had before. I discovered several dishes that I just LOVE by doing this.

Also, if you cook, mix something you do not like with something you love. I put a mushroom wine sauce over some grilled asparagus and it was pretty good!

Gourmet to me is just food that is way over priced & not that good! But it can also be exotic! Try Thai, Indian, or something new. We need to eat to live so enjoy the food you eat!

Not all, but seems to me like your very picky. Try Allrecipes.com and go to the ingredient search engine. Type the ingredients you DO want and on the opposite collumn, type the ingredients you DON'T want. This will help you find recipes that fit your taste buds. Hope this helps!

Which would sell better at a home party? Gourmet Food or Cosmetics?

I am thinking about joining a direct sales company and would either sell Gourmet food or cosmetics and bath products. Which would sell better, or which would you make the most money at? Does anyone know of any of the best companies?

Please, no other kind of companies but these two to consider.

When women are around other women that are purchasing stuff they tend to convince one another that they NEED the product. And honestly Gourmet isn't too interesting. They eat, its digested and then its gone. Cosmetics can be used over and over again.

Cosmetics all the way. Food is more a guy thing imo

I teach skin care and love it. I decided on my company because I love and use the products so I think first you need to love what you sell then look into the commission the company offers and get all the facts. I came from a financial background so the research I did before making my choice impressed me. What I liked best about my choice was how little I needed to carry and I have had several other home parties and the consultants do a lot of prep that did;'t appeal to me. Since both are consumable you can't loose.

Think of it this way. People love to eat. Men or women it doesn't matter! Food is always the way to go. Cosmetics...umm, people like me are fussy in what I use and I'm sure most ladies are...so it makes it more difficult to sell cosmetics. Skin is a sensitive issue the way I see it, same thing goes for bath stuff. Trips are a possibility to earn as well and building a team is always possible too. The earning potential is definitely there. An average home show can earn the hostess $250-$400 in free jewelry....which is what I as a rep. earn as well. So..for 3-4 hours of travel time/set up/show time...That is not bad at all. The women are great that I meet at shows. They love the jewelry, the life time guarantee and having a great time with their friends and family. There are different levels to sign in at as well...but with 3-4 home shows your start up fees would be paid for. It's just that easy. What are the best gourmet food stores and markets in the main centres of Australia?

I am looking for Gourmet Food Stores and local Farmers Markets in the Melbourne, Sydney, Brisbane, Port Mackay, Cairnes and Darwin areas of Australia. This can include stores that sell fresh produce, meat, fish, relishes, truffles, chocolate and all other delicious items. I am also looking for good florists.


Bondi Junction has an organic fruit and veg market on Fridays and the former Fox Studios (now Entertainment Quarter) have 2 every week... every Wednesday and Saturday....

David Jones in the City and at Bondi Junction has a great gourmet deli and on Bronte Road, Waverley (Charring Cross) there are several gourmet deli and a great health food store with gourmet products as well as a fantastic florist....

There is a Macros in Crows Nest and Bondi Junction which has loads of great organic products..

What about Perth? This is Boomsville and werve got it going on!! The Fremantle markets are really diverse, interesting and fresh!!

Personally I prefer the smaller international delicatessans for gourmet foods there are many around in any city or suburb, also harris farm markets have a good variety of some gourmet foods. Florists, I find flowers at fresh markets the best and arranging my own, the flowers are usually alot fresher and last longer, also are cheaper than buying from a retail florist.

I recommend Flour Power for bread and cakes etc in Dutton Park in Brisbane. Gourmet European goods made by an artisan baker.

He looks scary, but he's not.

What a worry for you! I live in a bush town where there are no restaurants, and we can't even grab a pizza. I wouldn't live anywhere else though, but sometimes I do miss going out for dinner, as I am from Sydney. God I miss seafood! These days do people in cities really eat that funny stuff I read about in magazines?

Gourmet food?

My family has started this tradition, where the intermediate familys take turn cooking gourmet meals on Sundays after church. I'm in the process of moving to another city, and my turn is going to be coming up soon. I'm the only 'child' that still participates with family activies (brunch, calls reguarlary, still visits grandma) and I want to make something really good!

I live in a 1 b.r. apt, so theres not that much space, does anyone know something that I can cook that will be really good, unique, and not space consuming?

My family really loves this, my son will actually take the time to come visit his mother across town if I make it so I hope you enjoy.

Proscuitto and Swiss cheese stuffed chicken breasts.

6 boneless skinless chicken breasts

12 slices of proscuitto very thinnly sliced

12 slices of swiss emmenthal cheese

2 eggs to beat

Italian season bread crumbs

Slice a pocket into the chicken breasts, insert two slices of proscuitto and two slices of cheese into each pocket, roll in bread crumbs, dip in egg bath and roll again in bread crumbs.

Place in shallow pan with heated oil and cook for approximately ten to fifteen minutes per side or until done depending on the temperature of stove, I usually do them on a medium heat. I serve them with garlicy mashed potatoes and corn on the cob.

All you need is a stove and an oven, you didn't state how many people:

Crown Lamb Roast with Sage Stuffing

Ingredients:

2 racks of lamb, tied into a crown roast,minimum 12 cutlets

3/4 ounce butter

2 onions, chopped

1 green apple, peeled and chopped

1 cup fresh breadcrumbs

2 tablespoons fresh sage, chopped

1 tablespoon fresh parsley, chopped

1/4 cup unsweetened apple juice

2 eggs, separated

Prep:

Preheat the oven to hot- 415F (210C) (Gas mark 6-7).

Trim excess fat and sinew off meat.

Combine breadcrumbs, sage and parsley.

Melt the butter in a small pan.

Add the onion and apple and cook over medium heat until soft.

Remove from the heat and stir into combined breadcrumbs/sage/parsley.

Whisk the apple juice and egg yolks together, then lightly stir into the breadcrumb mixture.

Beat the egg whites with an electric beater, in a small mixing bowl until soft peaks form.

Fold lightly into the stuffing mixture.

Place the crown roast in a shallow roasting pan.

Place a sheet of lightly greased foil in the base of the roast cavity.

Spoon the stuffing into the foil cavity, pressing in lightly.

Roast the meat for 45 minutes for medium, or until cooked to the degree you prefer.

Remove from oven and let the lamb sit for 10 minutes prior to carving.

Cut between the cutlets to separate and serve.

ROAST CORNISH HENS

4 Cornish game hens

Lemon juice

Garlic cloves, crushed

1/2 tsp. garlic salt

1/4 tsp. white pepper

1 tsp. poultry seasoning

Clean hens with lemon juice and pat dry. Rub with crushed garlic cloves and season, inside and out, with garlic salt, pepper, and poultry seasoning. Place hens in roasting pan in 1/4 inch water, wine or chicken broth. Cook in preheated 450 degree oven for 15 minutes, reduce heat to 375 degrees and cook for 30 additional minutes or until juices run clear.

CREAMY HERBED PANCETTA SPREAD

Makes about 2 cups. (16 servings)

2 oz. pancetta, finely chopped

2 8-oz. packages cream cheese, softened

1/4 cup mayonnaise

2 teaspoons Dijon-style mustard

2 tablespoons finely chopped chives

1 clove garlic, minced

Directions

Beat all ingredients together in large bowl until well blended.

Spoon into a small serving bowl, or into a foil-lined 2-cup mold.

Cover; refrigerate overnight.

Turn out onto a small serving plate, remove foil; serve with crackers.

*Substitute 2 ounces prosciutto, finely chopped, for pancetta, if desired.

Serving Suggestions

Pancetta, a cured but unsmoked bacon, gives this savory spread a distinct tangy note.

Prosciutto or other tangy dry-cured ham can be substituted if pancetta is not available.

This is my favorite chicken recipe. All you need is an oven and a baking dish. This is for four people.

Four chicken breasts (I like them on the bone)

mix together

1/4-1/2 cup balsamic vinegar (to your taste)

3 tablespoons extra virgin olive oil

one chopped shallot

2 cloves garlic chopped

1 big tablespoon dark mustard

the juice of a whole lemon (this is a must!)

Marinate the chicken for up to 2 hours

Place breasts in baking dish and pour remaining marinade over top.

Bake, uncovered, for 50-60 minutes at 400 degrees.

Serve with rice.

YUM!!!! Hope you like it!

Gourmet Chicken Pizza

INGREDIENTS

2 skinless, boneless chicken breast halves

1 (10 ounce) can refrigerated pizza crust

1/2 cup Ranch-style salad dressing

1 cup shredded mozzarella cheese

1 cup shredded Cheddar cheese

1 cup chopped tomatoes

1/4 cup chopped green onions

DIRECTIONS

Preheat oven to 425 degrees F (220 degrees C). Lightly grease a pizza pan or medium baking sheet.

Place chicken in a large skillet over medium-high heat. Cook until no longer pink, and juices run clear. Cool, then either shred or chop into small pieces.

Unroll dough, and press into the prepared pizza pan or baking sheet. Bake crust for 7 minutes in the preheated oven, or until it begins to turn golden brown. Remove from oven.

Spread ranch dressing over partially baked crust. Sprinkle on mozzarella cheese. Place tomatoes, green onion, and chicken on top of mozzarella cheese, then top with Cheddar cheese. Return to the oven for 20 to 25 minutes, until cheese is melted and bubbly.
